Pina Colada Rum Fashioned

I've seen this Cocktail before, but I'm actually going to give the Credit to the Kiki Lounge guys over in the Isle of Man. Back in September 2023, they did a Bar taekoever for Outlier Rum, at Laki Kane in London. And the Pina Colada Rum Fashioned was my favourite Cocktail of the night. I didn't ask the guys for the recipe, instead, I created my own version, using ingredients that I have here.
